Izzy turns one!!!
Today was Izzy's first birthday and what better way to celebrate than baking pup-cakes, going to doggy school, and then spending the afternoon on the beach in Mokuleia? It was hectic to say the least and documenting the day's events with pictures completely slipped my mind, but I thought sharing the pup-cake recipe I used might still be appreciated :) They were a big hit with all of Izzy's doggy siblings and friends (and even some of their owners).

Peanut Butter Banana Pup-cakes
Ingredients:
1 large egg
1 ripe banana
1/3 cup peanut butter (make sure you use fresh made peanut butter without sugar or salt, or at least make sure there isn't any xylitol in your peanut butter as it is highly toxic to dogs)
1 cup carrots, shredded
1/4 cup vegetable oil
1/4 cup honey
1 cup almond flour
1/3 cup 1--minute oats
1/4 teaspoon baking soda
1 teaspoon pure vanilla extract
creamy peanut butter, for frosting (optional)
Instructions:
Preheat the oven to 350 degrees F and line cupcake tin with paper liners.
Combine egg, banana, carrots, peanut butter, oil, honey, and vanilla in a large bowl.
Mix the flour, baking soda, and oats in another large bowl.
Combine the wet and dry ingredients together.
Fill the cupcake liners about 2/3 full.
Bake for 15-20 minutes.
Let the pup-cakes cool, then frost with creamy peanut butter (optional).
